MEXICAN CASSEROLE! OLE!!

again- i cant stress enough how great i am becoming at cooking. its not a bragging thing. im just really excited and its my own part of growing up and becoming the Godly women/wife i hope and pray of being! well here it is MEXICAN CASSEROLE. personally i hate the word 'casserole' i think it sounds just plain gross BUT this is very good! Keenan doesnt really like mexican food (except taco bell- if you can call that mexican) but he LOVED this dish! ENJOY!







INGREDIENTS:
- 1 pound lean ground beef
- 2 cups salsa (about 2 jars)
- 1 can chili beans (16 oz. & drained)

- 3 cups tortilla chips
- 2 cups sour cream (if u like that stuff
which we dont so i didnt use it)

- 1/2 cup chopped fresh green onion
- 1/2 cup chopped fresh tomato
- 1/4 cup chopped fresh cilantro
- 2 cups shredded cheddar cheese
















MAKE:

- Preheat oven to 350

- in a large skillet, brown beef. drain beef. stir in salsa. reduce heat. simmer about 10 min.stir in beans and heat through.


- spray 9x13 baking pan w/ cooking spray. spread crushed chips in a layer on bottom & add ground beef mixture. spread sour cream on top. top w/ onion, tomato, cilantro, and cheese.

- bake for 30 minutes or until cheese is bubbly
